Receipe Box! Vegetable-Beef soup

We eat a lot of soup in our family and this is one of Dean's favorites.  If he is sick, he asks for it. It is a three step process but takes little time and is super easy.  I can even make this on a night after work.

This soup didn't actually have a recipe.  My mom just threw stuff together.  
One day, I jotted it all down as she went.   I was about 13 years old at the time so my directions were horrid and I'm sure I left stuff out.  Doesn't matter, it is comfort food in a bowl and so good.  Not highly seasoned, this isn't gumbo y'all!  Make sure to have a good loaf of bread to sop up all the goodness the spoon can't reach!  




Mumu's old fashioned vegetable beef soup*

2 pounds stew meat
1 large can WHOLE tomatoes, squished.  
1 quart water with beef boullion cubes (you may need to add more water later)
1 large onion-WHOLE

Put the above ingredients into a large stock pot.  Cover, bring to a boil and then turn  down to medium.   Let it simmer for 1 hour.  After an hour, carefully remove the whole onion.  Squish it a bit to get the juices out.

After an hour, add:

1 can lima beans
1 can shoepeg (white nibblet) corn
2 potatoes, diced
1 onion, diced
2 celery stalks, diced
2-3 carrots, diced (I use frozen carrots to save prep time)  We like a LOT of carrots.  

Simmer until carrots and potatoes are almost tender. The last 10 minutes, toss in a handful of broken spaghetti.  continue cooking until the pasta is done.

Taste test for salt and pepper, serve!

Modifications:

*The original recipe calls for cubed arm roast but use stew meat because it takes less prep time.  *You can use a large can of diced tomatoes instead.  
*You can sub beef stock/broth if you want.  Might change the flavor a bit...don't know, never tried it!
*Some folks in my family don't want the pasta so I use a cup of ditalini pasta and cook it separately.  That way, people can just add it to their own bowls.
*Remember that if you add more veggies, you need to compensate with more liquid.

More catch up and a thank you!

I thought "Hook and a Book" would be a fun weekly post to do this summer...thought I'd get an early start. 

On my hook...more squares for the CAL.  
The book....  I loved Tony Hollerman novels.  He passed away and his daughter took up the torch.  I am sooooo hoping I love her style of writing as much as her dad's.



I wore the Soloman's knot shawl to work...


I made a pasta salad for lunch one day...it was so good I made for 3 days in a row!

crafty catch up....

The entire month of March was nuts.  Seriously.  Part of it is because of this little cutie.  Yes, here she is showing off her mountain climbing skillz.....



I never sat down without my yarn bag though and still managed to knock out my CAL squares and some gifts!

I used a lot of my green stash for March.  Green makes me happy.



I knit 4 spring scarves with some Mango Moon yarn called "Chakra."  Normally 28 bucks, I got it for half off...so glad I bought it.  I love how fast it works up.



I played with the pattern and knit each one slightly differently.  4 gifts done for Christmas!

March Madness!

March was a crazy month, it was also a tough one for me.  We lost both my mom and Ginger last March.  I just couldn't bring myself to do any posts.  I am hoping next March will be better.  After all, our amazing son's birthday is in March!  Here is a little recap of what went on...crafting posts to follow!!!!

First of all, Matt turned 19!   Brings tears to my eyes....love that boy so much.


I made his fav: my fresh strawberry cake!


Osa is turning into a snuggle bear!


Dean and I had a breakfast date...he did this with an app on his phone


I went with some girlfriends to Diamondhead and did a little shop therapy at a yarn store.  They had Noro on clearence so I bought a bunch of it for some wintery projects.  They gave me this project magazine free!  I love FREE!!!


and Kaela was inducted into National Honor Society and Mu Alpha Theta (math honor)


We are so blessed to have TWO wonderful children.  She makes us so proud.  Again, with the tissues!!!

Seussify!

Seussify something, that's what I said
What was I thinking? I'm outta my head!
I had to make something, simple and quick
So I Seussified Osa with a clip and a snip:



But it wasn't enough, it didn't quite "do!"
I needed to Seussify another thing or two!
So I pulled out my hook and some yarn in bright colors
Crocheted up some stitches, some old and some yothers...
I made a new cozy so fun and so neat


But my Seussify need still wasn't complete!
So back to my stash, I dug through and through.
I pulled out some fabric, some felt and some glue.
Thread and a needle, down I then sat
And made a BETTER cozy with CAT IN THE HAT!

Recipe Box: Peach Cobbler

I have an easy cobbler recipe that I have shared on here before but I thought I would share this one too.  It is a little different and it is nice to have options.

I do not recall my mother EVER making this....but she must have because she wrote how certain family members enjoyed it.



Here is the recipe.  The crossed out name is my sister's EX husband!  hahahaha!!


I'm glad I made it even though I didn't have fresh peaches.  I just used a large can of sliced and drained them well.  I tossed them with half a cup of sugar but the cobbler wasn't sweet enough.  Next time, I'll just use the entire cup as suggested.  After all, it is dessert!

Everyone else had a giant serving along with vanilla ice cream...the cobbler was GONE in no time!

February craftiness.....

Wow, this month FLEW past!  With a new puppy in the household, I stay busy with her.  She is growing and is happy....it is good to have so much energy in the house! 

I made this cozy as part of my craft challenge on my swap blog.  I had something else in mind but having recently become hooked on "The Walking Dead" series, I decided I'd make something with that in mind!    (During Mardi Gras break, we had several season marathons til 3 am.   Now we are caught up!)  





I continued with my CAL that Kerry is hosting and my stash of granny squares is growing.  I won't start putting them together until the summer.




And I made two scarves I've already blogged about here.  The color block one was supposed to be a Christmas gift but darling daughter snagged it for a friend!  

The last thing I made was a set of hacky sacks for a couple of my nephews.  I made 3 for each of them, that way they can also juggle with them if they want.




I found the pattern here via Tammy's blog.  They worked up quickly.  I already printed up the rules so all that is left is to store them away until Christmas!
